Chocolate Chip Cookie Dough Brownies *faint*

As the title suggests, Chocolate Chip Cookie Dough Brownies are definitely faint worthy! I love brownies and cookie dough, but when they’re combined it gets even better!

Besides the flavor, I love the combination of texture and color.   The chocolate, rich brownie on the bottom and the creamy chocolate chip filled topping, ohmygosh.  Needless to say delicious and SO worth the calories.

Another reason I wanted to try these was because I saw this recipe and knew one person in my family who would love it.  My brother loves brownies and anything with cookie dough so I knew he would love these.

Yield: 32 brownies

Prep Time: 30 min + cooling time

Cook Time: 25 min

These brownies are a major treat for cookie dough lovers…

Ingredients:

BROWNIE:
4 ounces unsweetened chocolate, finely chopped
1 cup butter, at room temperature
2 cups light brown sugar, packed
4 large eggs
2 teaspoons vanilla extract
1 cup all-purpose flour

COOKIE DOUGH:
3/4 cup butter
3/4 cup light brown sugar, packed
3/4 cup granulated white sugar
3 Tablespoons milk
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 1/2 cups mini chocolate chips

My thoughts:

OHMYGOSH.  These brownies are AMAZING! The brownies alone are fantastic, rich, moist and delicious.  They had a great chocolate flavor too.  They were more cake like, (I prefer more gooey brownies myself) but to hold up the dense chocolate chip cookie dough layer, they need to be stiff.  

Making the homemade cookie dough was easier than I thought.  And SO delicious.  And of course the extra layer of mini chocolate chips didn’t hurt either. 

I would  definitely recommend letting these chill overnight, if you can stand it.  It makes them easier to cut and taste better, if that is possible. 

Delicious, moist and absolutely divine.  If you have a sweet tooth and love chocolate chips and brownies, I would recommend you make these.  NOW!

Oh, hello again!

Woah.  I haven’t been on this blog in almost a year. *shame* I really do have a good excuse though.  A lot has happened in the past year and a half.  I took control of my life and have lost almost 50 pounds in the last few months.  Not where I want to be, but I’m getting there everyday.  That was the good.  Now the bad.

In the past year and a half, I also suffered a loss.  My best friend of 12 years and I parted ways.  It was painful and hard to deal with.  Needless to say, the past year and a half has been hard for me.  I wasn’t really living for a few months.  Or blogging or really doing anything.

But on to something fun.  I am very excited to announce that I am officially planning to attend culinary school and become a Pastry Chef, with the ulitmate goal of opening my own cupcakery/bake shop.

SO exciting.  Classes start next August.  I decided to start blogging again because I want to document my adventures in school as well in the kitchen.

Several years ago, I never thought I would pursue food as my career.  And I never thought I would go to culinary school.  But I decided against what sounded right and chose to follow my heart and pursue my passion.

So that is what I’ve been up too the past few months.  Some good, some bad, but both have shaped me into the person I am today. Which is worth it.

You’ll have to bear with me, I’m not good at blogging yet.  When classes start I plan to post as much as I can, with as many pictures as I can.  My first class involves breads and doughs.  My college advisor said all the students come back the next day with sore arms.  I don’t mind that at all!

So now that we’re caught up, I’ll get to work on my next post, involving quick breads.  Yum!

Blueberry Scones

Tonight I decided to try Blueberry-Buttermilk Scones.  As I was making the dough, I realized it wasn’t forming into a ball because it was too wet.  Then I remembered I hadn’t dried off the frozen blueberries.  So instead of scones, I made a blueberry-buttermilk loaf.

It is absolutely delicious! Brown and crispy, sweet and fluffy.  The only things I would add would be a couple tablespoon’s of sugar and a 1/2 teaspoon of lemon zest.   It wasn’t as sweet as I expected, but I think more sugar and lemon zest would do the trick.

Overall, I’m very pleased and will make it again.

Yummy Pumpkin Goodies

Ahhhh, Fall.  It’s my favorite season.  It’s crisp, the leaves are changing and  there’s a magical feeling in the air.  I love making pumpkin goodies to kick off the season. My favorite recipe is Chocolate Chip Pumpkin Bread.  It is perfection.  Moist.  Rich and chocolate.  Delicious.  I just love the combination of pumpkin and chocolate.

And although I love CCPB, I decided to mix it up this year.  Today I made Pumpkin Chiffon Cake.  I found the recipe in the magazine, Every Day with Rachel Ray.  First impressions, it looked pretty easy to make and it seemed like it would have a nice, light texture.  Once it was cooled and cut, I found it was a lot more dense than I thought it’d be, and didn’t have the strong, pumpkin flavor that I thought it would.  Overall, pretty good.  I will make it again, with a few changes.

To continue with the pumpkin theme, I’m going to make Pumpkin Scones with a spiced glaze.  (the link is below.)
